It's savory, it's sweet, it brings back childhood memories, and it's packed with veggies!
I had the cravings for these sandwiches the other day when I was talking about our 2013 March Taiwan trip. I just had to have them, so I made my own :)
Through articles online I found out that these little pork patties have carrots and onions in them, I guess that's one way to get your kids to eat the veggies: hide them in pork patties!
I received pretty good feedback the first time I made them, but I forgot to write down the recipe! I was just swinging it as I go, but the very next day I made a second batch and I wrote everything down to share on my blog.. The second post of my blog..=_=
Here's what I had used:
4 small onions
6 medium carrots
2 1/2 lbs of ground pork
2 eggs
1 tbsp of salt
3 tbsp of water
3 tbsp of soy sauce*
1 1/2 tbsp of mirin (optional, it's just sake and wine :])
3 tbsp of cooking wine
3 tbsp of sugar
* I guess this where it could go wrong, every brand of soy sauce is different, some are meant for dipping, some are low sodium, and some are meant for marinating. I'd suggest mixing all of the flavoring together to taste before mixing in the raw meat, so you don't end up with 2 1/2 lbs of salty or under flavored patties.
It really doesn't get any easier..
1. Mix all of the flavoring ingredients to taste
2. Sauté the shredded onions and the shredded carrots, set aside to cool down
3. In a mixer, mix pork, egg, cooled sautéed onion and carrots, and the flavoring, mix well
4. Use a 1/2 cup measuring spoon as mold to make patties, the patties should be liquidy enough at this point to scoop
5. Grill the patties and they're done! (You can freeze these and just microwave them when needed)
Now onto the Taiwanese sandwich..
In order to create the signature taste, the secret ingredients are:
Sweet mayo and white pepper!
Simply whip Real mayo with A LOT of sugar together and you get your sweet mayo :)
Here's how I layered them:
Bread 1: sweet mayo, pork patty
Bread 2: sweet mayo both sides, and cucumber slices, tomatoes, and a pan fried egg and place bread 3 on top
And of course I had to cut my ziplock bag in half using the heat sealer to create the signature triangular look!! Pretty proud of myself, so resourceful :)
